The Garrigue

The Garrigue: Its name comes from the Celtic root gar, which means 'rock', or to be more precise garric, 'the tree of the rock', the green oak. This is a rocky area of low-growing plants on a chalky soil that is poor in humus, originating from the gradual decline of the primitive forest. The Kermes oak is a dwarf oak that grows on the garrigue along with cade, phillyrea, blackthorn, lonicera, greenbrier, asparagus and snapdragons. Aromatic plants also grow in abundance, including thyme, lavender, rosemary, germander, savory, oregano, wild fennel and many more. The pharmaceutical and perfume industries use their essences and essential oils in a wide variety of products.
